Wanderung durch die Ravennaschlucht | Schwarzwald Urlaub | Teil 1
Die Wanderung durch die Ravennaschlucht war einer unserer ersten Ausflüge im Schwarzwald Urlaub 2021. Wir sind von Hinterzarten aus gestartet. So durchwachsen das Wetter in der ganzen Woche war, so war es auch an diesem Tag. Wir hatten schönsten Sonnenschein – und der Regenponcho kam auch zum Einsatz.
Früher hätte ich immer ohne Zögern gesagt, dass ich eher Meer- als Wald-und-Berge-Mensch bin. Aber ich glaube, das stimmt so nicht mehr. Ich fand Sylt letztes Jahr ganz toll, aber irgendwie empfand ich es als besonders wohltuend, dieses Jahr im Urlaub so viel Waldgrün aufzutanken. Die Wanderung durch die Ravennaschlucht ist für mich mit der schönste Ausflug in diesem Schwarzwald Uralub gewesen.
Als wir aus der Ravennaschlucht heraus kamen, fiing es ordentlich an zu schütten und ich war sehr froh, mein Regencape eingepackt zu haben.
Unsere Wanderung führte uns nach Breitnau, wo das Lokal, in dem wir eigentlich essen wollten, geschlossen hatte. Stattdessen wurde uns die Sonnenhöhe empfohlen, ein Pflegeheim, das eine Caféteria hatte. Ich habe dort keine Fotos gemacht, aber der Fisch mit Tagliatelle und der Nachtisch (Panna Cotta mit Heidelbeeren) waren wirklich sehr lecker.
Und schon waren wir wieder auf dem Rückweg.
Diese Wanderung durch die Ravennaschlucht war wirklich ein schöner Tagesausflug in diesem Schwarzwald Urlaub. Und irgendwie hat der Regen gar nicht gestört. Im Gegenteil, ich finde in der Natur im Regen sein auch ganz wunderbar.

Zimtschnecken in der Auflaufform – Der schwedische Klassiker mit zwei Twists, die ihn schön saftig machen | Rezept
Falls du noch nicht weißt, was du am Wochenenede backen sollst. Wie wäre es hiermit. (: Das Rezept ist eigentlich das klassische Rezept für schwedische Zimtschnecken. Nur das ich diesmal ausprobieren wollte, was ein Zimtschnecken Rezept so richtig saftig machen könnte. (Naja, und ich hatte noch Hefe von der Bärlauchpizza übrig, die verbraucht werden wollte.) Hefegebäck schmeckt ja oft toll, direkt aus dem Ofen. Aber davon bekomme ich Bauchweh und am nächsten Tag sind die Dinger dann oft trocken und ich muss sie in den Dinkelkaffee tunken.
Also habe ich ausprobiert, wie es wohl ist, wenn ich das klassiche Rezept für schwedische Zimtschnecken zwar befolge, aber zu der Füllung noch Quark mische. Und die Schnecken dann in Auflaufformen (ein bisschen wie Dampfnudeln) backe. Keine so wahnsinnig weit hergeholte Idee. Aber meist sind es ja gerade die einfachen Ideen, die so genial sind. So auch in diesem Fall.
Das Ergebnis: die Zimtschnecken waren mehrere Tage lang schön saftig.
Für eine vegane und/oder laktosefreie Variante könnte man sicher mit Kokoscreme experimentieren (also, anstatt des Quarks).

Hier jetzt also das Rezept für die saftigen Zimtschnecken mit Quark, welches auf diesem schwedischen Zimtschneckenrezept basiert. (Dass die in Schweden Kanelbullar heißen, weißt du vielleicht schon.)
Zimtschnecken Rezept – Saftig, mit Quark, in Auflaufform
Zutaten
(für 20 Stück, ich mache oft größere Schnecken, so dass es dementsprechend weniger werden)
FÜR DEN TEIG
1/2 Paket Hefe
50 g Butter
300 ml Milch
50 ml Zucker
eine Prise Salz
800 ml Mehl (ich benutze wie fast immer Dinkelmehl)
Trivia: Die Schweden messen beim Backen in Volumen nicht nach Gewicht, daher hier auch die Angaben in ml statt wie bei uns üblich in Gramm. Ich finde, das macht es einfach, weil man keine Waage braucht. Habe mal irgendwo gehört, dass die Maßangaben nach Gewicht akkurater sind. Den Grund weiß ich jetzt nicht mehr. Aber passt irgendwie, oder? 😉
FÜR DIE FÜLLUNG
50 g Butter
2 TL Zimt
50 ml Zucker
250 g Quark
Zubereitung
FüR DEN TEIG
Butter schmelzen und mit der Milch zusammen auf Körpertemperatur erhitzen. Die Hefe darin auflösen. Mit Mehl, Zucker und Salz zu einem gleichmäßigen Teig verkneten. In einer Schüssel mit einem Tuch ebdeckt ruhen lassen, ca. 45 Minuten (oder bis der Teig auf die doppelte Größe gewachsen ist). In der Zwischenzeit

Butter mit Zucker schmelzen, Zimt unterrühren. Etwas abkühlen lassen, dann den Quark hinein mischen.
Den Teig ausrollen, mit der Füllung bestreichen.
Teig mit Füllung „wieder“ einrollen. Die rolle entweder wie laut Originalrezept in 20 Scheiben schneiden – oder nach Gefühl auch in dickere Scheiben für größere Schnecken.
Der zweite „Trick“, um die Zimtschnecken saftiger zu bekommen, den ich hier ausprobiert habe, war, sie in Auflaufformen zu backen, anstatt wie üblich einfach einzeln auf dem Blech. Der Gedanke war, dass sie dann ja in ihrer eigenen Flüssigkeit backen, anstatt dass diese einfach auf dem Backpapier verrinnt und durch die Hitze verdunstet. Ich finde, das hat sehr gut geklappt, werde das öfter machen. Auflaufformen im Plural einfach deshalb, weil ich mehrere kleine zur Hand hatte. Man kann natürlich alles in eine große Auflaufform packen.
Die Auflaufform(en) dann auch noch einmal mit einem Tuch abdecken und die Zimtschnecken ruhen lassen, bevor sie dann bei 250° in der Mitte des Ofens ca. 8 Minuten (oder bis sie eben schön goldbraun sind) gebacken werden.

Rant
As you’ve noticed, I’ve been making more time to write here. Stealing minutes here and there (as Julia Cameron suggests in The Right To Write) really works. Of course, telling myself I’ll write just a little bit always leads to spending more time than I’d originally planned for. Which is exactly the point.
I’ve also been telling myself that to get back into the swing of things on this blog, it’s maybe more important that I write (at least during the week, when I can use the computer) than what I write. So far, that has worked as well. Once I start, there’s always something that wants to be said. I may start by ranting for a few paragraphs, which I most often delete later on. But at some point, something always wants to be said, and it is always something that is worth saying.
Two paragraphs in, I still feel like this is going nowhere, and maybe that’s because the things that want to be said at some point aren’t quite ripe yet. I do believe in sharing the process, and not just the result but sometimes the things we don’t live fully yet are better kept inside our hearts for a while longer before sharing them with the world.
Looks like a rant will have to do for today.

Here and now…ish
I am writing again. Journaling, letters, something that could turn into a novel – and here. All thanks to Julia Cameron’s The Right To Write – or thanks to my friend A., who lent me TRTW? Or thanks to the book launch of another friend that made me want to write again? Or maybe thanks to everyone and everything at once. Either way, I am grateful.
Where to pick up again after such a long absence? How about here and now…ish.

Let it grow
It has been quiet around here, I know. I think our slow internet connection at home is the main reason, but also I went through a rough patch where I didn’t feel like I had anything to share here. Things have turned around faster than I could have imagined, and I am feeling inspired and determined to breathe some life back into this blog.
We finally finished building our greenhouse last week (no pix yet), and sowed a bunch of vegetables on the patch of land Peter has been preparing – with more help from his family than from me, ehem. I blame the long office days due to the commute … so, thanks Birgitta, Stefan and Felix! The patch shrank somewhat from our original megalomaniac outline when we had to face the reality of the hard physical labor involved when preparing the soil … Pix soon to come.
Also, I seem to have found the holy grail (yup, once again) when it comes to health/nutrition. It comes in the form of two books (by the same genius authors, Dr. Mary Enig and Sally Fallon), namely Nourishing Traditions and Eat Fat, Lose Fat. I know, the latter sounds like it’s just another dieting book but it is really more about health in general than (just) weight loss. Hopefully I can keep the momentum, and write an entry just about those (which is the least they deserve).
What would a post be without some pix? Exactly.

Castration, crafts, and germination
Totally not motivated to sit at office any longer on a Saturday afternoon, even less motivated after discovery that cute cat pictures still on camera, not computer. No other recent pictures, so words only. Bear with me (hate blog posts without pix, worse than posts with only cute animal pix).
Writing about cute animals instead. Cats, ours. Minus one penis, luckily not holding a grudge – phew! Enough about cute cats.
Officially a member of Stöde Form now (only took 6 months, not due to elaborate application process but to simple procrastination process). Working at the store/café once a week and getting lots of tips and inspiration on gardening and mushroom picking. Great stuff!
Purchased seed starting set. Want tomatoes and peppers, need greenhouse, though. Planning on planting tomato and pepper seeds tomorrow as motivation to build greenhouse.

All yellow | The fall collection
Yup, it’s definitely fall. I am still not used to the fact that that doesn’t mean gray, rain and mud (hello Bremen, ’sup Gothenburg). Nope, here it means yellow, sun and more yellow.

Just one thing
I have been thinking a lot about how long I haven’t written anything, and how I could catch you up on everything that has happened. It’s been so much, though, that it’s only made me put off writing. So I decided I’d just write to say I’m still here. I still need to go to the library for internet (and that won’t change anytime soon), so for now my goal is just to post when I can, not about EVERYTHING that has happened since the last post but about one thing.
I haven’t been knitting or crocheting for a while now but I borrowed some books that might just inspire me enough to change that:

They are full of colorful projects that seem fairly easy, so I might even stand a chance of following through …

Indestructible | Plant life
The deal with the house has felt so right and so real the whole time to me that making the down-payment (this past Monday) doesn’t even seem like that big of a milestone. The house has felt like ours the whole time.
Not even the fact that we’re still waiting for an appointment with a chimney sweeper (who, we hope, will tell us that everything is OK because otherwise things could suddenly take a turn towards pretty pricey …) can change that. Like I’ve been saying: I have come to the conclusion that I’d rather be excited about things than worried even if not everything is settled yet. If everything works out, then great – I did not waste any time worrying. If things don’t work out – then at least I had those moments of excitement and happiness. Anything can change at any time anyway, so.
The plants in our apartment, which we once again abandoned for a trip up north, remind me how powerful and amazing life is. If these little guys can bounce back like that, so can I if for some reason things with this house don’t turn out as I imagine …

Summary – So lucky | Feng Shui
In this last part of my little „Feng Shui 101“ it is time for the big reveal. At least it’s big for me. However, I am going to begin with a summary of what I find to be the most important points. So, be patient – or scroll to the end of this article.
With all these personal Kua numbers, lucky and unlucky directions, and houses with back doors things can get pretty complicated: you and your partner/family members/room-mates very likely have different personal Kua numbers, plus the house has lucky and unlucky areas, which in turn might not match your personal areas of benefit/disadvantage.
And that’s not even considering that you might be living in a western house that was not built according to these Feng Shui principles, the toilet might be located in the wealth area, or the only physically possible way to have your bed facing is death … And how could knowing this be of any help?! Isn’t it just making you aware of that you’re doomed? Maybe ignorance is bliss …
Well, that’s not how I read it. From what I understand, it is important to remember that these „lucky“ and „unlucky“ areas/directions by no means equal „destiny“. With the knowledge about these directions, and the knowledge of the Feng Shui teachings, you can optimize the benefit from the „lucky“ areas – and there always seems to be a way to minimize the harm in the „unlucky“ areas.
If your personal beneficial and detrimental directions do not match the ones of your house, the personal ones seem to be more important.
And, maybe most importantly for the „worrier“ in you (that includes me, too): if your place of residence is constructed in a very un-Feng Shui manner, do not get hung up on the fact that your toilet happens to be in the wealth area. Focus on the things that you can do and let the rest go. Again, this is not determining your fate.
Now for the big reveal (for real now): Not only do Peter and I have the same Kua number (7), no – the lucky and unlucky directions of this number are also identical with those of the house (Tui)!!! Once again, I feel like the universe is waving it’s big foamy pointed finger …
At first I didn’t even realize the match between us and the house, I was too busy drawing the floor plan. Then, when I did see it, I thought that it had to be one of those math problems where it turns out that no matter which numbers you fill in, you always end up with the same result. Then I realized that, nope, if the house had been facing a different direction, we would indeed have a different result. So much for not questioning luck.
And just for fun (I really don’t know if this is interesting to anyone but me but anyway): here’s a list of the different rooms and their areas/directions in „our“ house (can’t wait for the day when i can drop the „“):
Bottom floor
- Entry hall – death: Better than it sounds, since you don’t really use this room for anything, I’ll just put in a bunch of plants, that seems to be a good remedy for most things unlucky. As are toilets, by the way, but I putting in a toilet in each of the four respective unlucky areas doesn’t seem very practical to me …
- Staircase/closet – loss & scandal: Also cool with that, for the same reasons. We’ll just keep the closet shut.
- Medium bedroom – obstacles, health, harmony: One of our office/guest rooms. Looking good, face desk away from obstacles, towards harmony. Too bad that the window is facing obstacles, I always want my desk by a window, not facing a wall. We’ll see.
- Bathroom – harmony: Some might say that’s a waste but, hey.
- Living room – harmony, wealth, misfortune, long life (and maybe some death): I think we can work with that.
- Front porch (don’t know if it counts) – loss & scandal, death, long life: plants, plants, plants
Second floor
- Staircase – loss & scandal: see above
- Hall – death: see above
- Master bedroom – obstacles, health, harmony. We should be able to have the head of the bed towards harmony, so I think we’ll be good.
- Kitchen – (a little bit of) death, long life, misfortune; with a pantry towards wealth: Well, let’s keep the glass half-full and focus on the pantry in the wealth corner. Long life is where the dining table is placed, so I guess that’s pretty good, too.
- Mini-bedroom – harmony: Our second office/guest room. I guess deciding who’s going to want which room will be tough – the harmonious but tiny one or the big one with the obstacle area?
